As part of our Thistle Green Initiative, our soup line is based on our favorite recipes with final ingredients determined by fresh surplus items on hand (much like a restaurant’s soup du jour) - helping us reduce food waste! While the ingredients are not listed on the website, they do not include the allergies we accommodate for, no soy, nuts, etc and they are always vegan - there is no meat or dairy in our soups.
The final product will have the ingredients listed on the meal packaging.
These 12 oz soups contain an average of 150-250 calories, 5-10g of protein and 8g of fiber, making them the perfect warming, nutrient-dense addition to any plan. The soup fat content range is 3-8 grams depending on the ingredients we use in a given batch. Since the soup ingredients change weekly, it’s hard to give an exact amount. The current soups available are linked here and described below as well:
- Creamy Vegetable: Thai Carrot Squash Soup - Note, this is not a 100% puréed soup. It's a silky puree base of carrots and fall squash featuring seasonal whole vegetables, brought to life with a bright dose of lemongrass, ginger and lime.
- Chowder: Sweet Potato Corn Chowder - A rich flavorful chowder with a corn and sweet potato base, brought to life with poblano chiles, cumin and lime juice.
- Minestrone: Seasonal Vegetable Minestrone - Thistle’s twist on the hearty Italian classic soup, featuring assorted greens, vegetables and quinoa in a rich tomato broth.
- Protein-Rich Chili: Chile Verde - our zesty, tomatillo green chile broth is loaded with protein-packed beans and seasonal vegetables.
Please note that in addition to these base flavors we include seasonal vegetables based on whatever surplus fresh produce we have in stock (so you may see beets, broccoli, mushrooms, for instance), so the color or appearance of the soup may vary compared to the images on our website.
We do not currently put an expiration or consume by date on any of our soups since we send them as a frozen product. With any of our items we recommend consuming within a few days of receiving or thawing.
