The deadline to create a subscription/account or make changes to your existing subscription is 11:59pm PST Thursday prior to the Sunday/Monday you want this to take effect.
All of our local delivery plans begin on a Monday (or Sunday evenings for some zip codes/regions) while our shipping plans are offered on Thursdays (or Mondays and Thursdays in certain zip codes).
